My pan is Pyrex and you're right, it's not deep enough.

Roast beef, a sort of stuffing made with bulgar wheat, butternut squash custard, mixed veggies and pumpkin pie. The pie is for my guys and the squash custard is for me, but I'll share.

OK, I took your ideas, Mrs.Above_All, and ran with them. I made something called Italian Stirfry with the shrimp. You saute garlic (lots of garlic) in olive oil, set the garlic and oil aside and stirfry carrots, onion, broccoli & bellas and add shrimp for the last few minutes. Serve with angelhair pasta. Mix the oil & garlic mixture with all and then top with freshly grated parmesan cheese. Um, um, good.

ORIGINAL: p31woman Meatloaf and broccoli-rice casserole. Mmm. That sounds good. Please post the recipe! Some of the old stand-by's from my single days, as leftovers of both freeze well. Meatloaf: 1 lb. hamburger, chopped onion, 1/2 cup oatmeal, 1/2 cup ketchup, 1 egg. Mix, spread in loaf pan, top with a little more ketchup. Bake at 350F for 50 minutes covered, then for 10 minutes uncovered. Casserole (the one my Aunt Betty always made ): 1/2 cup chopped onion 1 T. butter or margarine 1/2 cup chopped celery 1 pkg. (10 oz.) chopped frozen broccoli 1 can cream of chicken soup 2 cups cooked rice Grated cheese Saute onion in butter. Add celery and broccoli. Stir lightly until broccoli thaws. Add soup and rice and simmer for 10 minutes. Put into a casserole dish, top with cheese. Bake at 350F for 15 minutes or until cheese melts.

Tonight, I stuffed a chicken and made mashed potatoes, corn and gravy along with a loaf of bread. The bread turned out great and the rest of the dinner was pretty good too.
